with three sons, Matthew Edward, Mark Allison, and Theodore Luke. While her husband Edward owned and operated Collins Drug Store in Malvern, Betty kept busy raising their family and teaching at the Malvern schools, then later at the Glenwood State School and Area 13 until her retirement. Betty was a member of the United Methodist Church in Malvern, church choir member, and a scout den mother. She enjoyed watching birds, especially cardinals, flowers and spending time with her friends and especially with her family. Betty and Edward had been married almost 42 years when Edel died on June 10, 1994 at St. Joseph Hospital in Omaha, Nebraska. Betty continued to make her home in Malvern until the summer of 2006, when she moved to Morton, Illinois, to live near her oldest son, Matthew. Betty passed away on November 23, 2018 at the St Francis Medical Center, in Peoria, Illinois after a short illness. In addition to her husband, Betty was also preceded in death by her parents. Betty is survived by her sons, Dr. Matthew Knight and his wife Sue of Morton, IL, Mark Knight and his wife Angela, and Ted Knight, all of Dallas, TX; grandchildren, Stuart Knight and wife Abby of St. Louis, MO, Heather Hoschek and her husband Eric of Washington, IL, Kelly Simpson and her husband Christian of Wellston, OK, and David Knight of NYC, New York; two great grandsons, Teddy and Wally Hoschek; and a host of friends.
